unMEAT Chili Bowl with Sweet Potato

1 can unMEAT Chili

1 to 2 tablespoons olive oil

1 mediumonion, diced

2 cloves garlic, minced

1/2 lb sweet potato, peeled, diced

½ cupwater or vegetable broth


1 to 2 avocados, sliced

sprig of cilantro, coarsely chopped

2 to 3 stalks green onions, chopped

Dollop or two vegan sour cream

How To

1.In skillet or small pot over medium, heat olive oil and sweat onions until aromatic and translucent, about 3 to 4 minutes. Add garlic and sweet potatoes and cook for another minute.

2.Add a can of unMEAT Chili and simmer until potatoes are tender. Place in bowls and top with avocado, cilantro, green onion, and sour cream. Serve and enjoy with tortilla chips or a side of mixed salad greens. Serves 2.
