3 cupsmashed potatoes
1 canunMEAT Meat-Free Luncheon, diced finely
½ cupgrated cheddar cheese (vegan, optional)
¼ cupchopped scallions
1 tspgarlic salt
Sprinkle of freshly ground pepper
2 mediumeggs, beaten (or use egg substitute)
Vegetable oil for frying
Marinara dipping sauce.
1.Mix together mashed potatoes, unMEAT Luncheon, cheese, scallions, garlic salt and pepper.
2.Scoop by 2 tablespoonsful and form by hand into balls. Dip in egg and roll in breadcrumbs.
3.Deep-fry in hot oil until golden and then lay on a plate with paper towel to remove excess oil. (To air fry, drizzle balls with vegetable oil and air fry at 180C for 5 to 6 minutes). Serve with marinara or any choice of dip.
